My tomato plants hate me. For the second year in a row, I am fighting a losing battle against blight, a nasty disease that ravages tomato plants. It is damn near impossible to stop once it starts and it comes on quick. We have tried moving our tomato bed, some all-natural baking soda concoction and ferociously chopping off all the lower limbs of our plants in a vain attempt to contain those taunting little black dots that creep toward my tomatoes.
Another year and I have lost the battle. Next year the plan is to go on the offensive rather than the defensive. We will lay landscaping paper down before we plant and find a way to enrich our little seedlings which is supposed to ward off blight. If you have any tricks of your own, please share. I am desperate. All I want to do is make fresh marinara sauce with vine ripened Roma tomatoes that I picked with my own two hands. I don’t think that is an outrageous wish, but again, the plants hate me.
While we have not been able to stop the blight, we have found a way around it. We’ve started picking off the green tomatoes before the blight reaches them. The plan is to ripen the tomatoes in our basement and windowsills. Problem is, we don’t have enough windowsills in our home to ripen the insane amount of green tomatoes that we are dealing with. What we do have is fresh red onions growing alongside our beets and carrots, a few almost ripe peaches and a large bag of limes that I hoarded when the lime shortage scare struck. Together with the immature tomatoes, they come together to form a fresh, unique salsa.
- 2 green tomatoes, chopped
- 2 firm peaches, pitted and chopped
- 1 small red onion, finely chopped
- 1 jalapeno, finely chopped
- 1 large garlic clove, minced
- 2 cilantro sprigs, finely chopped
- Juice from 1 lime
- Wash and chop or mince all ingredients. Place in medium sized bowl and toss with lime juice. Let sit for at least an hour to let flavors blend and mellow. Serve with tortilla chips.
- The most important part about prepping this recipe is to make sure that your garlic is finely minced. No one like biting into a chunk of raw garlic.
