Hey Malcolm,

Cheers for the post. I’ve not cooked steak like this before (skillet to oven) as I spend most of my cooking time outdoors on the grill. And kind of have favorite techniques for different cuts already that are already winners. But next time I’m cabin bound I’ll be sure to experiment.
