I‘m somebody’s mother; I’m not supposed to do Jello shots. I’m somebody’s mother, so I go to bed at 10 o’clock every night and wear sensible shoes and never dance in fountains anymore. These are the rules of adulthood that are occasionally meant to be broken. Spending time with college friends is one of the best excuses there is to resume the “Whoo-hoo” behavior you mostly eschewed in your youth. I was more of a whiskey in a goblet girl, but nothing says Summer and silly, reckless abandon quite like jellified alcohol. I recommend trying lemon meringue Jello shots as soon as you possibly can. What time do you get off work? What are you doing right now? They are prettier than a faceted topaz and twice as intoxicating. And totally easy to make. Here’s how:
Lemon Meringue Jello Shots
Ingredients:
- 1 3 oz package lemon Jello
- 1 cup Whipped Cream-flavored vodka
- 1 cup cold water
- 6 lemons
Method:
Prepare Jello according to package directions, replacing cold water with vodka. Cut each lemon in half lengthwise. Use a paring knife to carefully trace around the white perimeter and remove the fruit without puncturing the peel. Use a muffin tin to stabilize the halves, then fill to the brim with liquid Jello. Let set overnight in the refrigerator. Slice into wedges (thirds) with a sharp knife, cut side down. Serve with plenty of snacks and a designated driver!
Delicious!
These are so delicious and the presentation can’t be beat! Thinking a “key lime pie” version would be wonderful too…

Just FYI, Don’t know if you are familiar with the site “TasteSpotting”, but one of your pictures from this delicious looking post made it’s way to their front page this morning.
Sheer unmitigated genius! Seriously, this is easy, brilliant, and almost guaranteed to be the hit of any party! Thank you, thank you, thank you for sharing it!
This looks amazing. I am definitely going to try it. I bet you can make variations with limes and/or tangerines, etc.

These were amazing!
These look amazing! I wonder if cold water can be replaced with a clear soda such as 7up, sprite, or even sierra mist? What kind of results? Has anyone tried this for a kid friendly version?
wow am going to give it a try i love lemon so much with this a new teast have arrive
After i made the first batch using this recipe, i thought, why not use my homemade limoncello instead of vodka. YUM.
I have two questions:
Why is it called Meringue?
What do you do with the lemon’s flesh?
