Parsnip Spice Cake

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup almond meal flour
  • 1/2 cup unsweetened shredded coconut
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon grated fresh ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 allspice
  • 1/8 teaspoon salt
  • 2 cups grated parsnip (about 2 large)
  • 1/2 cup sour cream
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter, melted and cooled

Instructions

  1. Preheat oven to 325. Grease a deep ceramic baking pan.
  2. In a large mixing bowl, whisk together flours, coconut, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, allspice, and salt. In another bowl, combine parsnip, sour cream, maple syrup, honey, granulated sugar, eggs, vanilla, and butter, mixing well. Stir wet ingredients into dry, until just combined. Pour into greased 8×4 cake pan and bake for 35-40 minutes.
