What a wonderful idea – I did similar to make a sweet and sour sauce with redcurrant jelly to go with roast leg of lamb – I never thought of applying the same principle to chicken. Now you’ve got me on a roll, I’ll have to make some raspberry jelly first as used the last months ago! Thanks for thinking up such a tantalizing recipe and sharing it.
